Owner Brant Baldanza, whose daughter has Celiac Disease, says “one of the first goals after we opened our first Corner Pub was to provide quality, delicious, gluten-free food, and more importantly have a staff that is educated in what “gluten-free” is…we don’t do it because the competition is doing it across the street, or cause it’s a fad, or cause it’s something we have to do. We do it cause we live it everyday, and we know the challenges of going out to eat while being gluten-free.”

And they really do get it.

The staff is well-trained. They have dedicated gluten-free fryers, kitchen spaces, and ovens. Gluten-free items are clearly marked with toothpicks that say the words “gluten-free.”

This healthy, fast-casual restaurant located in Kirkwood, Chesterfield and St. Charles serves nourishing whole food bowls, wraps, and salads to those who are gluten-free and other specialty diets like autoimmune, vegan, and paleo.

99% of Symbowl’s ingredients are gluten-free, with the sole exception being udon noodles. These noodles are prepared in a separate pot and are handled with separate tongs.

Prasino’s management says that its team is “well-educated in the preparation and execution of gluten-free foods, from changing of gloves and utensils to dedicating our only fryer to be gluten-free, as well as offering gluten-free substitutions on most of our dishes.” For meals requiring preparation on the grill or flattop, alert your server that you have a gluten sensitivity or allergy, and they will clean and sanitize the grill before preparing your meal.

“We wanted to create an environment where anyone with gluten-sensitivity or any dietary restrictions could come and enjoy a variety of options.” And indeed there are fantastic options.

Chef Partner, Tony Marchetto recommends trying the light and fluffy gluten-free pancakes, made with rice flour and soy milk.

Just mention you’re celiac or gluten sensitive, and they’ll take the appropriate precautions, including cooking meals in separate nonstick skillets to avoid contaminated surfaces.

Start with the surf & turf sushi roll, a mound of garlic butter edamame, and a bowl of gluten-free San-J Tamari soy sauce for dipping. Prefer something lighter? The beet salad with balsamic reduction, goat cheese fondue, and crispy artichoke is a solid choice.

In downtown Clayton, gluten-free patrons can relax, be social, and enjoy an extensive wine list at Louie’s Wine Dive—a casually elegant atmosphere with plenty to eat. From shared plates and salads to artfully crafted main dishes, there’s a range of gf choices available for lunch, happy hour and dinner—all made with local ingredients under the eye of formally trained chefs.

Starters include gluten-free brussel sprouts with candied pecans and parmesan (they taste as good as they sound!), or try the gf garlic black pepper calamari, battered and fried in rice flour, tossed with shaved green onions, and served with a side of sweet serrano pepper sauce.

For your main dish, the thousand dollar chicken with crispy garlic, calabrian chilis, chives, and asparagus with pan jus won’t disappoint. You also can’t go wrong with the Tandoori Chilean Salmon with cilantro mint chutney, roasted red pepper quinoa, macerated greek yoghurt, and cucumbers with micro-green spice blend.

Menu items are clearly marked gluten-free, or if they can be modified to be so. Just let your server know you are celiac or gluten sensitive when ordering so they take extra care. The manager on duty will be notified who then communicates with the kitchen manager to ensure the appropriate equipment and utensils are used. They have two fryers, one of which is dedicated gluten-free.

This one of a kind ice cream bar and restaurant offers made from scratch soups, salads, and sandwiches by a kitchen trained on gluten-free handling procedures. Owner Joy Christensen’s daughter has Celiac Disease so offering gluten-free options has always been important to her.

She recommends their signature mixed salad sandwich, which is the perfect combination of grilled cheese, chopped salad, and house made pesto, all on gluten-free bread. Joy says that if you mention you are celiac or that you are severely allergic they will use a dedicated section on their panini grill.

Gluten-free polish dill pickle soup is just one of many comforting, delicious soups available daily. Just ask which gf versions are available and request they be served over rice instead of bow-tie noodles. And who doesn’t like to finish off a light, refreshing meal with the champion of all desserts—Ice Cream!

Adults can enjoy an ice cream martini while kids spring for the sundae. Joy and her team share how “all our standard ice creams and sorbets are gluten-free. If we have a seasonal ice cream that is not gluten-free, we post it on the white board and all servers are made aware. If a gluten-free order comes in, they get a new scoop and get ice cream from a new tub of ice cream.” All other scoops are kept in a dipping well that is constantly flushed with fresh, clean running water. Scoops are not allowed to go from flavor to flavor.

A build your own menu allows you to customize your meal. Pick either a bowl, wrap, or salad. Pick your style (southern, asian, latin, mediterrannean). Then your protein (chicken, beef, salmon, pork, tofu, or bacon). Then add sides like Moroccan sweet potatoes or brussel bites.

Owners Angelica and Simon want you to be able to enjoy a quality meal and feel comfortable while doing so. “We started as a prepared meal service working for families with celiac disease and it has been a priority of ours since, to be able to help and accommodate those with dietary restrictions. We aim to keep flavorful food without the gluten. We are completely gluten-free with the exception of the whole wheat wrap, which we don’t make in house to avoid cross-contamination. The wheat wraps are heated in a separate flat top to avoid cross contamination and they are handled in a separate cutting board as well.”

Angelica says the cauli-rice bowl, southern style with pulled pork is a must try. Other gluten-free customer favorites include the cauli-rice bowl, asian style with chicken, and the gluten-free wrap, mediterranean style with mofu tofu and avocado. Located a short drive outside of St. Louis in Edwardsville, IL, Clevland-Heath is a popular weekend brunch spot that caters to the gluten sensitive. Owner’s Keith & Kari McGinnes, say that “customers travel near and far” to try some of their gluten-free dishes, including their personal favorite, the gluten-free cherry pie and the customer favorites—gf biscuits and pancakes.

For these items, they use a rice-based, gluten free flour, which they say creates a flaky texture with great taste.  The gf pancakes are cooked on a separate grill, the gf biscuits in separate pans, and the gf pies are cooked separate from the regular pies.

Keith says that “allergies and aversions are carefully noted and attended to” and they take additional precautions by sanitizing and using separate utensils when prepping these items to avoid cross contamination.  Since their fryers are not dedicated gluten-free, they sauté and prepare other gluten-free items in a separate pan, individually.

Owner Jerry Caruso says, “we take care to use uncontaminated ingredients in a sanitary space, and all employees are trained on handling special orders for customers with food sensitivities, allergies or Celiac Disease.” For gluten sensitive diners, they’ll prepare gf sandwiches in their prep kitchen on a cutting board used only for gluten-free orders. They will change their gloves and cut produce to order to avoid cross contamination.
