Wildflour Gluten-Free Baking Company

Wildflour | Facebook

Though not a sit-down restaurant, this dedicated gluten-free bakery in Bellevue offers plenty of gluten-free goodness by advance order. Wildflour Gluten-Free Baking Company has a wide selection of muffins, sweet and savory scones and biscuits, cookies, biscotti, cupcakes, layer cakes, bundt cakes, baguettes, focaccia bread, hot dog and hamburger buns, rolls, pizza crusts and sandwich loaves.

Owner Rebecca Johnson says “after a decade and a half of struggling myself to find palatable gluten-free baked goods that were made in a dedicated environment, I decided to take years of personal recipe development and share it with others to help improve the level of gluten-free offerings, at least on a local level.  I am NCWS, and sensitive to the point where I react to products made in a wheat flour environment. Most of our items are also dairy-free and soy free.  We don’t use any corn products.  We offer some vegan options as well. Our baked goods parallel wheat laden equivalents in appearance, taste and texture. You and the people you serve our product to will not know they are eating gluten-free.” Here’s what Rebecca says customers love most:

Wildflour | Official

French Baguettes. A crisp exterior, soft and chewy interior, that can survive the freezer or counter without being toasted. “This was the most difficult product for recipe development, and took 25 or 30 variations before perfecting. Better than it’s wheat counterpart!”

Wildflour | Official

Herb Focaccia Bread. An Italian style flatbread made with extra virgin olive oil and fresh rosemary.  Topped with a fresh and dried herb medley and sea salt.  Perfect for dipping in olive oil or marinara sauce, or creating a panini at home!

Wildflour | Official

Lemon Poppy Seed Loaves. A light and tangy tea loaf. Almond flour and poppy seeds create a fantastic texture in this loaf topped with a fresh squeezed lemon juice and organic powdered sugar icing.

Wildflour | Official

Scones. Flavors rotate monthly with the two top favorites being Lavender Lemon Blueberry and Cranberry Eggnog.  A moist and flaky scone is studded with fresh fruit and topped with a decadent icing.
