This 100% dedicated gluten-free lunch and dinner spot specializes in delicious cornmeal pockets stuffed with a variety of meats, veggies, and cheeses. From skirt steak and Louisiana jumbo shrimp to sweet plantains, melted mozzarella and more, you’re in for a real treat.

Owner David Mantilla says “Colombian  cooking is all about using fresh ingredients. While growing up, I never knew any different than going to the farmers market around the corner and grabbing what was going to be cooked at home that day. Arepas are corn based, and flour is not used much in Colombian cuisine.” And flour isn’t used at all at his restaurant.

As far as a safe gluten-free dining experience goes, owner Gary Wollerman says “over the past 2 years, we have found ways to eliminate wheat from the majority of our menu. We have a dedicated fryer and kitchen space, as well as a strict protocol for how to handle gluten-free orders from the moment the guest interacts with the server, to the server discussing the order with the chefs, and the executive chef monitoring the cooking process to ensure everything stays completely gluten-free.”

His team’s approach to developing its recipes is equally as comforting. “Several years ago, we noticed this trend and awareness surrounding gluten intolerance and realized that it wasn’t going away. Rather than fighting this dietary need, we decided to embrace it and find ways to make our menu gluten-free friendly. Instead of making exceptions for them, we looked at the whole menu and figured out ways to get around using wheat.”
